This daily favorite came to life when Weetbix just wasn't doing the trick for maintaining steady blood glucose levels. I dove into research, exploring breakfast recipes, but they all seemed too complex and needed to be eaten immediately. Then I discovered this gem! I could prepare it the night before, and it has been my go-to ever since. It's a beloved dish that perfectly supports blood glucose stability. Plus, there's endless flexibility with this breakfast, though I always enjoy keeping it simple and sticking to the basics!
Ingredients
Ricotta (3-4 tablespoons or however much is desired)
Fruits of choice! ( All fruits are good however we always steer away from pineapple given its high sugar content). My favourites include
Apple
Strawberries
Blueberries
Banana
Seasonal fruits such as grapes in the summer or plums in the winter
Honey (one tea spoon)
Cinnamon (a sprinkle)
Optional Extras
Slivered Almonds
Sugar free maple syrup
Method
Add ricotta to bowl
Add fruits to bowl
Top with honey and cinnamon
Serve up!

Ricotta is an excellent choice due to its high protein content and low sugar, making it ideal for individuals with diabetes. Adding slivered almonds is also a great option for those who enjoy nuts, as they are low GI, high in fiber, and rich in magnesium. While my household isn't fond of almonds, I personally appreciate the addition.
