Eggplant Parmi

As highlighted in my original blog post, the Eggplant Parmi makes an excellent side dish. Eggplant is a fantastic vegetable and I personally enjoy it roasted with a touch of oil. However, that wasn't exciting enough for the family—so I introduced the Parmi style. By adding a few elements and roasting it, you elevate the flavor and fun factor of what is typically a bland vegetable.
Ingredients
Eggplant (sliced thinly)
Cheese
Tomato
Ham
Options Extras
Salt and pepper
Tomato Paste (as a substitute for tomato)
Method
1 . Top eggplant slice with ham, tomato and cheese
Place in oven (roughly 180 degrees Celsius for a fan-forced oven) for 20-25 mins
Serve Up!

This side dish is absolutely a winner! It's delicious and a bit intriguing. According to Diabetes Australia, eggplant (or aubergine) is packed with nutrition, low in carbs, and low in calories—making it the perfect vegetable to incorporate into your meals whenever you can!
